Steps to make Chocolate Double Layer Burfi:
  1. In a pan add 1 cup ghee. When ghee becomes hot add the maida and roast it on low flame. Roast it till raw smell goes and you get a nice aroma. Will take about 4 to 5 minutes with continuous stirring on low flame. Remove it from flame and divide this into two halves.
  2. In another thick bottom kadai,add 1 cup sugar and 1/2 cup water. Boil this till you get a one string consistency syrup. One string consistency is very important. Check it at the back of the ladle with your forefinger. That is between thumb and forefinger, a string will form. This is one string. Add elaichi powder to it.
  3. Switch Off the flame and add the half portion of maida to this syrup and mix well without lumps. Add vanilla essence to it. Now on low flame keep stirring continuously until the mixture gets thick.This should be of burfi consistency should not be more thickened. Keep a burfi tray greased with ghee. Pour this on the tray.
  4. Now again in a thick pan, add one cup sugar and half cup water. Boil it till you get one string consistency syrup. Be careful as one string consistency is very important. Meantime add cocoa powder to the roasted maida and mix well.
  5. Add this cocoa and maida mix to the sugar syrup and mix well without any lumps.Now on low flame keep on stirring constantly until the mixture gets thick.This time I have removed little earlier so that upper layer will be little soft. So the you can get the taste of chocolate. You can see the pic below.
  6. Pour it on the same tray that is on top of the maida burfi. Allow it to cool.
  7. After about 25 to 30 minutes it will get warm. Then you can cut the pieces as per your choice small or medium sized.
