Heat the frying oil in a small saucepan over medium heat. Fry the katayef in the oil until crispy and lightly browned. - Mix all dry ingredients not the baking soda
- Place the warm water in the electric mixing bowl while mixing on high add the dry ingredients gradually to form thin pancake mix
- Let it rest for hour dissolve the baking soda in 1 tablespoon warm add to the pancakes mixture and keep stirring
- Using electric fry pan set at 350 degrees pour 1/4 cup dough and cook like pancake on one side only remove to towel until they cool try not to touch at all
- Fill each pancake with nut mixture or cheese file by pressing edges together to make a semicircle
- Brush each on both sides with oil place on a baking sheets and bake at 400 degrees in oven for 10 minutes
- Dip in cold syrup
- You could deep fried the pancake for few minutes then dip it in cold syrup
