The ingredients needed to make Soya Tofu Biryani:
  1. Take 100 g soya chunks
  2. Get 100 g tofu (cut them into small pieces)

Instructions to make Soya Tofu Biryani:
  1. Rinse the rice thoroughly with running water for 2 to 3 times then soak it for 30mins.after soaking the rice, strain them nicely and spread on a plate.
  2. Heat some water in a bowl and add the soya chunks give it a boil then simmer it for 10mins. After that strain all the water and squiz the soya chunks, keep aside.
  3. Take a bowl add 1/2 cup curd, 1/4 teaspoon turmeric powder, 1/4 teaspoon red chilli powder, 1/2 teaspoon salt, 2 tablespoon biryani masala, 1/2 teaspoon ginger garlic paste, all the soya chunks and the cut pieces of tofu. Mix well and keep aside.
  4. Cut the onions into slice then fry it with oil to a golden brown colour(here fry 3 onions). Keep some sliced onions for later.
  5. Take a pressure cooker and heat. Add 2 tablespoon oil, once the oil heats add all the whole spices, fry it for 30 secs you will get a nice aroma from it. Then add the rest sliced onions (here use 1 onion) fry it to light brown the add the ginger garlic paste stir it for 1 min. The add the chopped tomatoes fry it for 2 mins. Once the tomatoes cooked well add turmeric powder, red chilli powder and salt fry it for 30secs, then add the rice.
  6. Mix the rice with the onion tomato masala nicely for 2 to 3 mins add water. Note:- for 1 cup rice take 1.5 cup water. Mix well and pressure cook it for 2 whistles on medium to high flame. And allow to release the pressure itself.
  7. Take a large pot, grease some oil, add half of the cooked rice, then add all the marinated soya and tofu, sprinkle some biryani masala, add half of the fried onions, some chopped coriander leaves, 1/2 teaspoon rose water. Then add the rest rice, sprinkle some biryani masala, add half of the rest fried onions, some chopped coriander leaves, 1/2 teaspoon rose water and lastly add the desi ghee, cover it with a light lead.
  8. Place the pot on heat and cook it for another 10 mins on a low flame.
  9. For onion raita, chop 1 small onion, 3 green chillies and some coriander leaves. In a small katori add 2 tablespoon curd whisk it with a fork to smooth became then the chopped onions, green chillies and coriander leaves, some salt as per taste, 1/2 cup water, mix it well and your raita is ready (you can freeze it then)
  10. Now open the lead of biryani pot carefully, scoop from side with a spatula, and serve the hot, tasty and healthy soya tofu biryani with the raita and enjoy
