- Boil rajma for 5-6 whistles and mash it partially.
- Heat oil and butter in a pan and put cumin seeds and allow to crackle.
- Then add garlic and onion and saute till onions turn translucent.
- Then add tomatoes and capsicum and cook for a while.
- Then add coriander cumin powder, red chilli powder, turmeric, garam masala, salt and 2 tbsp water and cook for few minutes.
- Then add tomato sauce, mashed rajma and mix well.
- Cook till the mixture looks little dry.
- Off the flame and keep aside.
- For the dough
- In a vessel put all the ingredients and add enough water and bind medium soft dough and keep aside.
- How to proceed
- Make small balls of the dough and roll to a roti of about 6 inches diameter of medium thickness.
- Then apply butter to half portion of the roti.
- Spread pizza sauce on the roti.
- Spread the prepared stuffing evenly.
- Sprinkle some processed and mozarella cheese.
- Put some olives.
- Close with the other half.
- Press lightly to remove air and seal the edges using fork.
- Shallow fry on hot tawa using oil till golden on a medium flame.
- Repeat to make more parathas.
- Cut and serve with raitas or chutneys.
